Heitcz for the holidays

Posts like this are why I love doing this blog. I had a great time reading this hahah. Another heater from Kevin Heitczman

"Coming home for the christmas break means a few things. Hanging out with friends, relaxing around the house, being the dummy at best buy the night before christmas, and getting blasted with snow, but there are 2 things that stand out the most. Putting up christmas lights and eating home cooked meals. After driving back from the city, my brother and I started our day long project of making our house the most festive on the block (which isn't hard since out neighbors blow it every year with just wreathes and white lights) I'm a man who likes classy light setups with the big bulbs and no crazy plastic santas or blow up snowmen. You want a 10 ft frosty in your yard, man the fuck up and roll him yourself.


So after many broken bulbs and almost slipping on the roof, we take a break for dinner. Now our mom knows how to feed us. We come in and she's got a pot full of spicy chili, home made home fries, some burgers she made with the extra ground beef, fresh rolls, and before she made us some hot chocolate while we were out side. Gotta love mom.


We were in a rush to got out and get more extension cords before the roads got to bad so I took everything we had and threw them on a roll and hit the road. So here we have a burger topped with chili, american cheese, home fries, with homemade pickles and some sauces. Nothing hits the spot better from being outside in the cold all day than that.


Then the next morning I wake up to find my mom had made some egg salad and I went from there. Taking the egg salad, I found some pancetta in the fridge, as well as some home fries from last night and hooked it up. It's got egg salad with sauteed pancetta, melted swiss, and the home fries.

Heitczman's back in town

"It's been WAYYYYY too long since I sent shit in but I'm back with some fall classics and winter bangers.

First up are a few hand helds I made while a photo shoot for work. Of course these guys blow it and get food that you need to eat with a plate and utensils which is a fail when in a working environment. You need to be on the move while working and a sandwich is the perfect way to keep up the multitasking. That being said, nothing gets me more amped then being able to turn a sit down meal into a sandwich. Creativity at it's finest. Coming in we got two breakfast starters I made as soon as I got on set. They had toast, bagels, omelets, condiments, and some fruit so I made a nice Peanut butter and banana sandwich as well as throwing one of the omelets onto a bagel and starting the day off right. Now when lunch came to us, I made a roast pork tenderloin, rice pilaf, and apple stuffing sandwich which peaked the appetites of fellow employees and they soon followed suit.

The next one if a lunch sammie I made one weekend home . We got roast turkey, melted swiss, and fresh made guac, on a toasted hero with some weird multigrain chips that my mom had. They def taste better than they look.

next we have a breakfast treat from rainbow deli by school. Got that bacon egg cheese with a hashbrown on top and some ketchup. Great way to start the day

Oh and this delicious monstrosity was sent to me by my other brother Steve. This massive pile of bacon was at some deli that's situated between 3 dive bars and when people drink, they love to eat.

Following that we have two sandwiches from an awesome deli by my apartment, Strokos. My roommate and I go there so much they usually know what we're going to order. But you got to be creative with these places so when I walked in and saw their dinner was BBQ Brisket, you know I had to get that on some bread. Topped with melted swiss, avocado, and bbq sauce, this thing left me wanting more. The other favorite from them is a chicken cordon blue sammie with avocado, sour pickle, and some salt & vinegar chips. Nothing compliments the smooth and mild taste of the sandwich then a good pickle and S&V chips.

Finally we have a group from my recent trip to florida for a photo gig. You put me anywhere near a complimentary breakfast, there's going to be something delicious coming out of it. We got a toasted bagel with scrambled eggs, bacon, sausage, cheese, and western home fries piled on top. It was messy but tasty. We also have another breakfast meal with 2 pancakes, maple syrup, egg, and sausage together - Ah mazing.

and to wash everything down, you need a official arnold palmer.

So how am I going to make this taste good?

We've all been there before your starving but you need to go grocery shopping. You look in the fridge and you try to make a delicious meal out of what ever you have left. Some times you come up huge and discover an new unreal sandwich and other times you fail epically and need to cover everything in ketchup just to stomach it. Well the other day I came up huge all I had left was 4 slices of salami, i one slice of ham, 2 eggs, and a pack of chipotle sauce from Wendy's. I grilled up the salami and ham cooked the eggs in the fat and went crazy with the chipotle. It was sick

"This place on the first floor in the building I work at has breakfast sandwiches and I always got sausage egg and cheese cuz the eggs are real and a bit runny which I love. The other day I was asking this kid at work if they have other breads to get a sandwich on cuz I was sick of the usual roll. I was just in the mood for something different.

His answer: Hmm you could probably get it on sourdough or something. But I recommend ordering a double sausage, egg, and cheese, with bacon, onions, and hot sauce on a buttered roll.

This sandwich had so much awesome flavor and texture. I had to get another one the next day and didnt eat for about 9 hours after eating this sandwich both times. But then the next day - today - I heard people in my office complaining that the place was out of sausage. Me and the kid who told me about the sandwich knew why. The Sausage Extinctor!"

Black Friday Sandwich

Although this year the emphasis on the "day after" or the "Black Friday" sandwich pales in comparison to last years it is still the most important sandwich of the year and Big Greg Scalo was nice enough to share his with the world

"Here is a sandwich I made with the Thanksgiving leftovers. I had posted it on my blog, http://lunchoclock.blogspot.com, and wanted to share it with your blog since this is where I made my first post ever and your blog got the ideas flowing to start my own blog.

"The best part of Thanksgiving is the following day's sandwich that can be made from all of the left overs. I usually start thinking about the sandwich in the beginning of the week to make sure I do not miss any key items. Serious Meat and I made a quick trip the convenience store mid morning on Friday to get some rolls and American cheese. Suprisingly, the convenience store has some great rolls. I went with a club roll and Serious Meat opted for an Onion roll. Hopefully Serious Meat will do a write up about his sandwich. Although I made it for him, I don't want to misrepresent his feelings in anyway.

The club roll had a nice crust and soft center, and was the optimal jumping off point for this sandwich. Working from the bottom to the top, the sandwich consisted of American cheese, Stuffing**, Ham, Turkey, Stuffed Mushrooms, and Ranch dressing. The 5 key players (Ranch is a condiment and considered the 6th man) in this sandwich really worked well together and highlighted each others strengths and hid the weaknesses. My money is on this starting 5 over the New York Knicks anyday.

In most athletic rosters the "**" indicates the captain of the team, and it is no different here. The captain of the 2009 Black Friday Sandwich is the Stuffing. This isn't your run of the mill Stove Top Stuffing, no way, no way. This stuffing was made by Big D and as usual, it never fails. This stuffing includes the standard breading, celery, onion, carrot, and chicken broth, but those are just the pawns to the main ingredient...Sausage! If you have never had this kind of stuffing, I am sorry. Let me know and I will get you the recipe.

Note: A key player that did not make the team this year was the side of brown gravy. Somehow all of the gravy ended up in the freezer and I didn't feel like waiting for it to defrost.""




Here is my creation its your standard mashed taters on the bottom followed by ham turkey stuffing and some zucchini on top I, as well as Greg, was plagued by the lack of gravy on this sandwich but its all good

Mouth of the South

I was recently shooting photos for EA Sports on tour for the release of NBA Live 10 I joined up for the last 2 weeks which covered the southern states here are some samples of the deliciousness I encountered along the way.

UUUUUUNNNN REEEAAAL!!! This meal takes the cake even though it is not a sandwich. But you can bet your boots If I had a roll or 2 pieces of bread it would have been. This small family owned Joint in Walker Louisiana was one of my top 10 eating experiences of all times. From the crazy looks we got when we walked in to how extremely friendly the waitress/owner was. I Ioved every second of it. It was a plate with catfish, Cajun stuffed crab, stuffed shrimp, fried shrimp,crab fingers, hush puppies, oysters, frog legs, a cup of gumbo, and a baked potato........Exactly

This was the first thing I ate on the trip a huge steak and cheddar with sauteed onions on marble rye with the amazing circle chip french fries. Lawrence Kansas

Meat Loaf Peppers and Onions Via the Golden Corral Orlando FL. GOlden Corral is the best buffet I've ever encountered we ate there like 5 times the dinner rolls are unreal

Mr.Taco Luling Texas mexican food is a must In Texas and this small family run spot fed us right! I ordered some ridicules platter combo and make this wildman taco monstrosity. The girl that worked there thought we were hilarious.

Swine Flu BBQ!

This post should have been up in September
"The Swine Flu BBQ was the brain child of the brother's Heitczman,
Craig and Kevin. We went all out for a day/night of food filled fun
and everyone left happy. Along with the normal bbq food (burgers,
dogs, salads, etc) we decided to go the extra mile with some pulled
pork, S&P, Chicken wings, Venison, and the hit of the party,
Alligator. Bringing the animal count up to 5 for the night. (next year
we're thinking a Noah's Ark theme with 2 different meals of the same
animal) Bill Opper coming in with 6lbs of left over nacho cheese added
a nice touch to everything we ate. The party didn't really start until
the deep fryer showed up and everything was fair game. Gator,
cheeseburgers, jerky, butterfingers, cashews, crickets...you name it,
it got thrown in. Next year we need more emphasis on the fryer and
make everyone guest bring something they want to deep fry cause
everything was super good.

"The Venison Cheese Steak was a spur of the moment sandwich that came
about with leftovers from the BBQ. I had to make the Venison that
night before it went bad and I didn't have much supplies to work with
so it became a sandwich. The only bad part was the roll was also from
the BBQ so that was getting stale but ya gotta do what ya gotta do."

The imported italian onfocaccia. All the Classic meat of an italian Except that they replace the lettuce onions and tomato with a layer of OLIVE SPREAD! Are you fucking serious? The muzz is homemade as is all the meats on this delectable masterpiece. Only available at rossi's deli in Poughkeepsie. this sandwich is bigger than my head. No lie.

My sister sent me this one after a long night of studying

"Totally forgot about this incredible sandwich my roomate and i constructed a couple weeks ago. I'm pretty sure the contents of this sandwich were as follows: grilled chicken broccoli and spaghetti in a tomato sauce, beef rice a roni, sauted chop meat aka ground beef , all brought together with sauted onions, garlic, fresh tomatoes, a little sun dried tomato alfredo sauce to give it some viscocity, curry powder, cumin, cardamom, lime juice. Knowing me there was probably basil and thyme and maybe even jalepenos thrown in there as well, piled high on a poppy seed and onion hamburger bun. Needless to say it was an infusion of many flavors which made a more than fantastic midnight snack."
